    CALICO CHEESECAKES FIRST STARTED IN 2003. AT THAT TIME THERE WERE FEW OPTIONS TO PRODUCE A CHEESECAKE THAT WAS CONSISTENT IN TEXTURE AND COOKING TIMES. THE WATER BATH TECHNIQUE OBTAINED THE PERFECT RESULT.

    AFTER PURCHASING A BLODGETT TRIPLE DECK OVEN, CALICO WAS OFF AND RUNNING.

    OVER THE YEARS, THE TECHNOLIGY AGE OF COOKING HAS DRASTICALLY INFLUENCED THE FOOD INDUSTRY. CALICO HAS SWITHCED FROM THE SPRING FORM PAN TO AN EIGHT OUNCE JAR. STILL IN A WATER BATH BUT WITH EVEN BETTER CONSISTENCY, EASY TO SHIP AND EXPAND THE CUSTOMER BASE.

    I HONESTLY NEVER LIKED CHEESECAKES.

    MY FIRST EXPEIRENCE WAS A DRY NEW YORK STYLE WITH CHERRIES IN SYUP THAT ACUTALLY MADE MY TEETH HURT. EARLY IN MY CAREER I WAS GIVEN THE POSITION AS PASTRY CHEF. I WAS DETERMINED TO MAKE A BETTER CHEESECAKE.
